Fall recipe box~ #2 & #3

I made a few new things this weekend for our fall family dinner & bonfire. These are both out of my Fall Family & Friends Gooseberry Patch cookbook!!

FALL HARVEST WARMER
2 c. water
1/2 c. sugar

2 4-inch cinnamon sticks
10 whole cloves
2 c. cranberry juice

1 c. orange juice

Garnish: orange slices


Combine water, sugar and spices in a saucepan over medium-high heat; bring to a boil. Add juices; reduce heat and simmer for 10 minutes. Discard spices. Serve warm, garnished with orange slices. Makes 4 servings.

I doubled the recipe and it made about 10 mug-fulls. It is delicious, so I would suggest doubling or tripling the recipe! I love cranberry juice and liked that this was a yummy warm drink without any apple flavor. I warmed my water, sugar and spices in the crock pot for 2-3 hours, then added the juices about an hour or so before serving.

BUTTERSCOTCH BARS

18-1/4 oz. spice or carrot cake mix ( I used spice)
2 T. brown sugar, packed
1/2 c. oil
2 eggs

2 T. water
1/2 c. chopped walnuts or pecans ( I used walnuts)

1 c. butterscotch chips


Stir together cake mix and brown sugar. Add oil, eggs and water; mix well. Stir in nuts and butterscotch chips. Spread in a 13"x9" baking pan sprayed with non-stick vegetable spray. Bake at 350 degrees until done but not dry, about 22 minutes. Let cool; cut into bars. Makes 20 bars.

I'm not usually a butterscotch fan, but I love spice cake and was in the mood for a fall dessert. These were very easy to make and pretty yummy! Next time I might try them with chocolate chips instead.

  1. Oooh, you're making my mouth water! I love cooking with pumpkin. I make pumpkin chocolate chip bread and it's dairy free so I can still eat it!

    And aren't you totally loving that we're actually having fall weather this year?!

  4. Laura, here's an easy one for cookies. All you need is 1 pkg. spice cake mix, 1 16 oz. can solid pack pumpkin, 1 6oz. bag milk choc. chips. Mix all together and bake for 12-15 minutes at 350. I usually double the batch to make more cookies. They don't last long around here. I call these 1-2-3 Pumpkin Cookies becuase they only have 3 ingredients. I hope this will help you out.
