Menu Plan Monday

Sorry I missed last week's menu planning...it was a crazy week. We actually did eat at home, but nothing was planned. I'd stand in the kitchen and call out three options for Justin each night after looking through the fridge and the cupboards, then we'd decide :) This week is crazy too, but I'm on the ball...and I'm starting with Sunday evening since we won't be home too much next week!

Sunday~Justin's gourmet hamburgers with baked beans & chips
He comes up with a new recipe every time...once we find one we like, I'll share it!

Monday~Young Professional meeting at Neives' (a local Mexican restaurant)...yes, I'll be treating myself to a Corona!

Tuesday~I'm in charge of the Last Roundup Tea Party & Western Carnival sponsored by the Arts Council. We'll have all sorts of fun carnival games for the kids and serve a hot dog picnic!

Wednesday~Swiss Chicken (recipe below) & Crinkle Cut Carrots

Thursday~Family BBQ at Megan & Brent's...I think we're having kabobs!

Friday~Chili Dogs

Swiss Chicken
6 boneless, skinless chicken breasts
6 slices Swiss Cheese
1-10oz. can cream of chicken soup
1 pint half & half
1/2 pkg. Pepperidge Farm cornbread stuffing mix
2 T. melted butter

Place chicken breasts in baking dish; top with cheese slices. Blend soup and cream; pour over chicken. Sprinkle with stuffing mix and drizzle butter over the top. Bake 45-60 minutes as 350 degrees. Serves 6. (I usually half the recipe when it's just Justin & I)

  1. Your menu for the week sounds too yummy! My stomach is now growling and its hours until lunch. I'll have to try out your Swiss Chicken recipes. Sounds delicious!

  2. this swiss chicken recipe sounds delish! i find we spend less, eat healthier and are more relaxed when i plan meals out a bit. otherwise there's too much "discussion" over what to have. smile!
